We've changed our title structure and some other SEO options because we disabled and removed SEO Plugin. So I can see now that Google slowly replaces title structure with new ones. So how long does it take for Google to go back to previous ranks?

Google is always updating its searches and it will take earlier or sometimes it takes a long time (usually when there is a big update in which the implementation is step by step) then this will affect the positions depending on the algorithm.

It depends on few factors, like amount and quality of backlinks, website content, website structure, etc.
